Cool LENTIL Recipes!

I've been noticing lately that this particular recipe has come up - I'm planning to make it this weekend!!
Lentil Bread - for those of us who maybe don't do well with simple  carbs, or have a grain, sugar, milk,  potato or egg  intolerance - this is a simple alternative that is easy to make.... I'll make an update later as to how I thought it tasted!

Lentil Flat bread  (I think you can make these in a well cured cast iron pans or stainless steel with a little oil)  

Lentils - why are they worth eating? 
From Harvard School of Public Health... but also .... what we've known from so many years of eating these: 
Lentils are low in sodium and saturated fat, and high in potassium, fiber, folate, and plant chemicals called polyphenols that have antioxidant activity. [1] These nutritional properties have led researchers to study their effects on chronic diseases. Lentils also contain slow-digesting resistant starch that delays the absorption of carbohydrates with blood sugar-lowering effects, as well as being a source of prebiotics that feeds gut flora to help prevent digestive diseases. [1] Animal studies have shown that lentils can lower blood pressure, blood cholesterol, and blood glucose. [1,2] Human studies have found that lentils may improve cholesterol levels in people with diabetes and may protect against breast cancer in women. [3,4]
